I have a 1-year-old solid white cat with pink skin. He has consistently had crusty eyes...

Many cats can have crusty eyes for many reasons. While white cats may be a little more sensitive, I would not chalk this up to being a genetic reason unless you've proved there isn't another cause or it cannot be treated. Perhaps your first veterinarian saw something anatomical that made him think this was genetic. One very common reason for eye issues is the feline herpes virus. This virus cannot be cured but tends to come and go, causing eye discharge or crusting on and off. Unfortunately, without seeing your cat, I can't give you a total answer but I would encourage you to stay on top of the problem and continue with medical treatment as needed.
